Versatile Avocado Dip

We always have avocados on hand in our house. Always. In fact, if there ever is an avocado-less day, a subtle vein of unease works it's way through the family. School lunches often include a whole avocado, a knife, a little container of balsamic vinegar and salt. Zeke and I reach for avocados for mid-day snacking when we're working at home and most of our salads for dinner include avocado. So you get it...we're fans. But sometimes, we can't get to all our precious beauties when they are at the height of perfection, so when they start slipping down the slope of perfectly ready (which is sort of like an ovulation calendar type of thing right? I mean really there is just one PERFECT day and then the experience isn't so optimal but still very enjoyable) we make guacamole or this dip. It's great with raw veggies, tossed through cold noodles with grated lemon zest and arugula, served with veggie fritters for dipping...the list goes on. Enjoy!

Versatile Avocado Dip

2 large, ripe avocados

4 tablespoons of fresh lime or lemon juice

2 tablespoons of water

4 tablespoons of extra virgin olive oil

4 tablespoons of natural, full-fat, probiotic yogurt like our Seven Stars yogurt

2 green onions/chives/regular onion, finely diced

2 large garlic cloves, crushed

Sea salt

Black pepper

A dash of red pepper flakes is nice too!

Put everything in the blender and blend away!
