Use It Up: Spicy Purple Cabbage & Mango Slaw
Wow...how about this weather? I don't know where you are, but as I type this it's still 80 degrees and I hear my neighbors AC running already. It's H-O-T. Ironically, today's recipe has a lot of heat too: Spicy Purple Cabbage & Mango Slaw. It's a Use It Up that will have you breaking a sweat and ready to run through the sprinkler.
Naked. (It's that good.)
That said, this is a combination I wouldn't normally have considered -- purple cabbage with mango and spicy chili sauce? Wouldn't have thunk it. But, I loooove Sriracha; I worship the rooster like it's some sort of deity, so I had to give this recipe from The Undercover Cook a try.
I pretty much followed Jenna's recipe verbatim (except I omitted the regular white cabbage and increased the Sriracha) and holy hot coals; this stuff was tasty. Perfect picnic food and a great way to make use of what's in my fridge.
As the wise folks of Alka-Seltzer once said (or Yo Gabba Gabba for those of you with young kids): "Try it! You'll like it!"
Spicy Mango and Cabbage Slaw
From The Undercover Cook...slightly modified
1/2 head purple cabbage, cut into thin strips
2 ripe mangos, peeled and cut into thin strips
bunch green onions, chopped
1/2 cup cilantro, roughly chopped
1/4 cup mayo
1/4 cup Greek yogurt
3 tablespoons apple cider vinegar (Bragg's is the best...it has THE MOTHER)
2-3 tablespoon Sriracha (I like it spicy! The original recipe called for 1
Mix all ingredients. You can whisk the Sriracha, ACV, mayo, and yogurt separately if you want, but I didn't bother. Stir to coat well. Serve with a large glass of ice water.
