Salad for Breakfast - January 8, 2011
Saturday breakfasts are kind of a big deal in our house. Usually Zeke makes his breakfast "special" which is a couple of our eggs from Windy Knoll fried up with some tasty cheese melted on it, bacon, and all served up on two toasty pieces of sourdough. Sometimes it's omelets or scrambled eggs...or pancakes hot off the griddle. So today, I wanted my Salad for Breakfast to be a little special. Here's what I came up with.
Sliced roasted gold beets, sliced fresh mozzarella, slices of navel orange layered with black olive tapenade and finished with an orange marmalade vinaigrette (made the marmalade yesterday..recipe coming up later today) and dusted with some chopped toasted pepitas. Oh, and for a little extra pizazz...a jumbo caper for garnish.
It was really delicious and I loved how the sweet marmalade vinaigrette played against the salty briny tapenade and the brightness of the fresh oranges.
