Salad for Breakfast December 31, 2010
I thought the last salad for breakfast of this year should be a big one so I piled all sorts of favorites into a bowl and tossed it with, what else, a champagne vinaigrette!
Here's what it consisted of: Big pile of romaine lettuce. Mixed sprouts, red and yellow bell peppers, shredded Talbot Reserve cheddar (from Chapel's Creamery), chopped Roma tomatoes, raw walnuts, shredded carrots, sliced radishes, chopped purple cabbage.
This baby is a rib sticker, unlike yesterday's salad rolls which had me starving by 11:00. I should have eaten a few more of them. That's the thing about SFB...all those great enzymes in the raw veggies get your digestion going so if you're not used to eating breakfast, you're body will be geared up for lunch a little earlier. At least that's what I'm finding out.
I will be out of town the next two days so it will be interesting to see what I can put together for SFB when not in my own kitchen. I'll keep you posted. HAPPY New Year to everyone and hears to a healthy, happy, and veggieful 2011!
