Salad for Breakfast December 28, 2010

Today was all about "refreshing" flavors. I wanted something a little tangy, and definitely juicy. Here's what I came up with:

Shredded Carrot, Yellow Bell Pepper julienned, fresh pineapple chunks, blueberries, whole mint leaves (refreshing!) topped off with sprouts and a big squeeze of lime.

This totally satisfied my craving and was so good and refreshing. To make it a little heartier I would add some roasted cashews and maybe a yogurt/mint dressing, but today it was just right.
