Salad for Breakfast - January 12, 2011

I had a hankering for a Greek Salad this morning but without a juicy tomato in sight, I had to improvise. I came up with a Greek Salad/Chicken Slouvaki mash up. I give you, "My Winter Greek Salad".

Here's what was in today's Salad for Breakfast: Chopped Romaine, chopped scallions (one whole one, with the green parts too) half a chicken breast that was sauteed in olive oil, lemon juice and oregano) a litle feta and a plain yogurt/cucumber/garlic and mint sauce. I drizzled the organic Olio Beato olive oil that we just started delivering over the whole thing, a squeeze of lemon, salt, and freshly grount pepper. Oh, and not to forget those big fat Greek capers that I love so much.

I've got to say, it was a really great salad. The lemon juice and olive oil made it juicy...not tomato juice running down your chin juicy, but I'll settle for it seeing as how we're in a deep freeze and we've got months to go before a true Greek salad will be had.
