Radish, Avocado & Grapefruit Salad

Truth be told, when I first saw this pretty salad on Lorelei's Tiny Kitchen, I thought, "ehhh." Yes, it's beautiful and very Springy-looking, but just seemed waaaay too healthy to actually taste good. Boy, was I wrong.

I assembled all the ingredients just like Lorelei did, and then I tossed in a homemade champagne vinaigrette and: WOW. I could eat a trough of this. (I think of everything in terms of gluttonous portions meant for hogs...to me, this means it tastes good.) For a hearty meat and potatoes girl like myself, I was pleasantly surprised to find I absolutely loved this unique salad.

Plus, I learned how to supreme citrus. How I got this far in life without knowing how to do this, I'll never know, but this Youtube video helped out immensely and made my grapefruit segments come out picture perfect.

3 grapefruits supremed and segmented
3 avocados, diced into 1 inch pieces
5 radishes thinly sliced
1 tbsp olive oil
1 tbsp champagne vinegar (white wine works well too)
2 tbsp chopped shallots
salt/pepper to taste
3 tbsp grapefruit juice

Make vinaigrette with olive oil, vinegar, shallots, juice, and seasoning.

Toss grapefruit, avocado, and radishes with dressing. Serve immediately.
