Pineapple with Mint Sugar, Lime and Berries

This recipe is one of our recipe kits that is the crowning glory for many meals. It goes great with Indian, Thai, Mexican, Middle Eastern and African inspired meals and is sooooo easy to put together. Not only is it easy, but it's something you can prepare ahead of time. For a dinner party, I'll serve this along with a few different ice creams/sorbets. Usually coconut, mango and blackberry. When it's for our family, I serve it just like this.

Pineapple with Mint Sugar, Lime and Berries

Peel and slice the pineapple and arrange on a platter with the berries piled on top. With our recipe kit, you'll get with blackberries or blueberries. Rip the leaves off the mint and pound in a mortar and pestle or mince fine with a knife. Add the sugar to the mint and pound (or mince) again. Scatter the mint sugar over the pineapple and when you're ready to serve, squeeze the lime over everything.
