Perfect Day's Green Bean, Fennel, and Carrot Supreme
This recipe is from the most adorable little cookbook: How to Cook the Perfect Day by Nikki McClure. I recently bought it as a present for my friend's daughter, and as I was thumbing through, I stumbled upon this recipe. I tried it, made just one modifications (added minced garlic) and behold: killer green beans.
So here's to you cooking up a perfect day...and some beans!
Green Bean Supreme
inspired by Nikki McClure's recipe in How to Cook the Perfect Day
1 tablespoon olive oil
1 inch piece of ginger, peeled and grated
2 tablespoons fresh orange juice
1 teaspoon poppy seeds
salt and pepper
2 carrots, peeled and cut julienne
1 small fennel bulb, very thinly sliced
pound green beans (I blanched mine until then were crisp tender)
1 clove garlic, minced
Whisk together oil, ginger, OK, poppy seeds, garlic, salt and pepper. Toss carrots, fennel, and green beans. Chill before serving.
