Paleo Breakkie Bites
Make them for breakfast or make them for easy eat on the run breakfasts during the week. Really, these could not be easier to make. The picture is basically the recipe but here it is in words. Also, you could add cheese if you like. If you do, add it on top of the spinach before you add the egg. Enjoy!!
1 pound bacon - of course we love our bacon from pastured, humanely raised pigs
12 eggs from happy hens
a handful of baby spinach or other greens
freshly ground black pepper
Preheat oven to 380 degrees. Use a regular size cupcake tin - not a mini and not a jumbo. Wrap about 3/4 of a strip of bacon around the cups of the tin. You can piece together the ends of pieces...they will stick when baked, forming a nice bacon nest. Push a pinch of spinach leaves into the bottom of the cups, about 8 is what I used. Crack an egg right on top of the spinach. Sprinkle with freshly ground black pepper and bake until the eggs are set and the bacon is crisp around the edges; about 20 minutes.
