Meyer Lemon, Garlic and Bay Marinated Mushrooms
These delicious marinated mushrooms are a great quick gift to make and give to your 'shroom loving friends.
1 pound cremini mushrooms
1/4 cup olive oil
1/4 cup freshly squeezed Meyer lemon juice
1/4 cup diced red onion
3 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon whole black peppercorns
1 bay leaves
Kosher salt and freshly ground black pepper, to taste
In a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes; drain well.
In a large bowl, combine mushrooms, olive oil, lemon juice, red onion, garlic, oregano, peppercorns, and bay leaf; season with salt and pepper, to taste.
Transfer to an airtight container (we use mason jars) and place in the refrigerator for at least 8 hours and up to 1 week.
Serve at room temperature.
