Lemon Oregano Roasted Potatoes

I've roasted potatoes a million times, but always forget how much lemon juice changes the whole flavor of this typical side dish. Your potatoes go from zero to hero all with a little zing from fresh squeezed lemon juice and oregano. Pair with pretty much anything except an old tennis shoe. A perfect complement to lamb.

Lemon Oregano Roasted Potatoes

3 pounds potatoes, cut into 1 inch slices
1/4 cup fresh squeezed lemon juice
1/4 cup olive oil
1 tablespoon fresh oregano
1 tablespoon kosher salt

Toss the potatoes in other ingredients in a large bowl. Roast in oven on 375 for 45 minutes or until potatoes are fork tender.
