Have a Blueberry Mint Lemonade with the New Kid on the Block
Hi, I'm Lily. I'm not actually the new kid on the block, I've been chowing down on WGG veggies for almost 15 years now! Some of you probably met me in my mom's newsletter when I was first born. And now I'm back all these years later, did you miss me? I'm so excited to share some of my favorite summer recipes with you, and I thought nothing says hello like a tart tangy refreshing lemonade!
This season the blueberries have been coming in like crazy, and this is a great way to put them to use. For two glasses, I threw in two heaping handfuls of berries. Of course, you can modify this amount depending on how much juice you intend to make. I made this all in our Vitamix, but any blender works just as well.
Start by cutting the lemons in half and juicing them, I used six.
Pour the lemon juice in the blender and throw in your blueberries. The mint really adds a lot of flavor to the juice, so toss about 6 mint leaves into the blender. To sweeten up the tartness a little I added a few squirts of agave nectar. You can add more or less depending on how sweet you want it. The final and easiest step is just turning on the blender and watching as the beautiful fushia color comes together.
I personally love the tartness to this lemonade, but if it's too tart for your liking you can always water it down. To finish everything off I poured the blueberry lemonade over a whole lot of ice so it was extra cool and refreshing. Here you can add mint as garnish, or add a little lemon juice or agave if you think you need it. All this together shouldn't take more than 10 minutes. It's quick easy and delicious, the perfect poolside drink. Enjoy!
