Eat More Greens: Collard Greens Smoothie
Happy 2013 -- let's make it clean and GREEN!
While I made my pork, sauerkraut, and black eyed peas today, I decided to drink the greens portion in a smoothie. In fact, that's one of my resolutions: eat more greens. While all my other new year's goals can seem a little overwhelming (do Tracy Anderson workouts 4 times per week, drink less booze -- ouch, read a book per week, live in the moment, and generally avoid my slothful, gluttonous ways), the greens part I think I can handle.
It's easy to add on greens to my weekly box, so I'm simply going to try to vary the ones I choose. This week I got a few extra bunches of collard greens and between that and the arugula, I'm going to be eating leaves every day this week. My three fail safe methods of eating greens are simple: drink them in a smoothie, saute them in coconut oil and balsamic vinegar, or toss them with olive oil, a little lemon juice and salt.
So here's an easy smoothie recipe you can do in any old blender or even a food processor. Feel free to add the Stevia or not -- between the apples, kiwi, and the blueberries, the drink already has a sweet flavor. I've noticed my kids drink way more if I add in a little natural sweetener though.

COLLARD GREENS SMOOTHIE
2 large leaves of collards
1 kiwi (skin on but ends chopped off)
juice of 1 lemon
1 apple, cored
1 ripe banana, peeled
2 small carrots, scrubbed but not peeled
2 or 3 tablespoons chia seeds
1 cup frozen blueberries
1 ripe avocado, peeled and with seed popped out
1 teaspoon Stevia
2 large glasses of water (this is important so you're not chewing your smoothie...yuck!)
Blend everything together very well. Drink up! You'll be surprised at how you won't even realize you're drinking collard greens. The blueberries give the drink a purple hue that will fool even your most discerning of smoothie drinkers. Cheers!
