Cucumber Nectarine Summer Salad

While flipping through Erin Gleesons beautiful new cookbook The Forest Feast, a colorful salad caught my eye. Her version used strawberries and snow peas, which is perfect for Spring. However, summer is here (YAY!) and it brings juicy nectarines and snappy radishes.

I sliced everything up and tossed it in some olive oil and Virginia Vinegar Works Nectarine Vinegar. Voila!


2 cucumber - sliced into long ribbons

2 nectarines

2 radishes

a handful of feta cheese

a handful of tamari roasted almonds

dress with oil and a splash of nectarine vinegar

salt and pepper to taste
