Coconut Chia Pudding
Make these Coconut Chia Breakfast Puddings as part of your weekly meal prep and you'll have a yummy grab and go breakfast on hand...heck, they are SO good that they can easily be considered dessert! We carry 100% pure coconut milk with no thickeners. It's amazing!! You'll need two boxes for this recipe as they are 8 ounces each.
1 can coconut milk
1/4 cup maple syrup
1 teaspoon vanilla
1 teaspoon ground cardamom
pinch of salt
Half cup water
4 heaping tablespoons Chia seeds
4 1/2 pint mason jars
About 1 cup of fruit or toppings that you like
Mix together the coconut milk, maple syrup, vanilla, cardamom, and water until fully combined. You can do this in a blender. Place 1 heaping tablespoon of Chia seeds in each of the jars. Pour the coconut mixture evenly into each jar. Stir to fully mix the chia seeds and put the lids on the jars. Refrigerate overnight before serving. Top with your choice of toppings.
