Cauliflower Rosemary Soup

This soup from the Tone It Up girls is perfect for the times when you want something warm, creamy and comforting and only 50 calories so go ahead and grab a big hunk of sourdough to go with it ; ) Oh, and if you have one, you can throw it all in the crockpot and forget about it for 5 hours! 

Cauliflower & Rosemary Soup

4 cups water
1 head cauliflower, chopped
3-5 sprigs fresh rosemary
1 tsp. oil
1 shallot, chopped
1 tsp. salt

If using a crockpot, combine all ingredients and cook on low for 5-6 hours. Once cooked, remove rosemary sprigs and blend until smooth in a blender.

If cooking stove top, first add olive oil and shallot to a large pot and saute on medium heat. Next, add all remaining ingredients and cook on medium heat for 20-30 minutes, or until cauliflower is tender. Remove rosemary sprigs and blend until smooth in a blender.
