Breakfast of Champions: Chia Seed, Yogurt & Fruity Bowl

One thing I always struggle with is breakfast. I'm not a cereal fan; it's something I never have in the house. I like bacon and eggs, but don't like cleaning the pans afterwards. Hard boiled eggs or green smoothies are a favorite, but sometimes you just need a change.

I figured I'd share my latest morning meal, just because it's so easy, tasty -- and very healthy. Lisa introduced me to chia seeds, but I usually just tossed them in my smoothies. But if you throw them in liquid they plump up like crazy and almost lend a tapioca-like consistency. My friend who got married in California recently was told by Dr. Perricone (yes, THE Dr. Perricone! I say that like he is Mick Jagger...heh) that she should be eating almond milk with chia seeds sprinkled with cinnamon. It's like delish. And a great way to get antioxidants and omega-3s.

Anywho, my variation on this is just adding chia seeds to plain whole milk yogurt. Almond milk is OK to me, but still seems kinda processed. It's hard to find unsweetened too, so I figure the Seven Stars yogurt is a good swap. Give it a go some morning! You'll be hooked!

Chia Seed, Yogurt & Fruity Breakfast Bowl

1 cup plain whole milk yogurt
1/4 cup chia seeds
fresh fruit -- I used blueberries but strawberries, raspberries, mangos, anything you like will do!
1 small dollop jam (optional) I used Christina Maser's raspberry jalapeno -- yummmmm

Mix everything together and let chill in fridge for 10-15 minutes or until the chia seeds puff up. Then, eat your breakfast puddin' -- enjoy!
