Amazing Herb-Baked Tofu with Mushrooms, Peppers and Green Beans

Juicy, spicy tofu meets the lovely textures of tender-crisp veggies and good-for-you grain in this vegetarian dish -- a satisfying, healthy alternative to a deep-fried takeout craving!

What you'll need:

1 cup farro
1 package extra-firm tofu, cut into cubes or rectangles
2 tbsp olive oil, divided
1 tbsp sesame oil
2 tbsp soy sauce
1/2 tsp dill weed
1 tsp crushed red pepper
1/4 tsp black pepper
4 cloves garlic, minced
Green beans, trimmed
Mushrooms, sliced

Preheat oven to 350. Cook farro according to package directions and let it simmer while you prepare the other ingredients.

Make your marinade: In a large bowl, whisk together 1 tbsp olive oil, sesame oil, soy sauce, dill weed, red pepper and black pepper.

Add tofu and toss gently.

Transfer tofu to parchment-lined baking sheet. Save your marinade! Bake tofu for 10 minutes, then flip, sprinkle with garlic, and bake for 15 more.

Heat 1 tbsp olive oil in a large skillet. Add green beans and sautee over medium heat for 15 minutes or until browned and soft.

Stir in mushrooms, pepper and remaining tofu marinade. Continuing cooking until peppers are bright red and mushrooms have softened.

Stir in farro and divide among 4 plates. Top with baked tofu and serve.
